Cafe Rio’s take on the classic Mexican dish starts with select cuts of beef, which have been slow simmered mild guajillo and arbol chiles. A savory blend of tomatoes, garlic, and onions, are then added to round out the flavors during the hours-long cooking process. Once the beef is perfectly tender, it can be added to your choice of tacos, burrito, or quesadilla. A savory consommé is also served on the side for dipping.
